Method

  1. Froth the syrup with the 60 ml of milk using a handheld frother until it thickens to pourable foam, 20 seconds.
  2. Fill a glass with ice and the remaining milk, pull the espresso over it.
  3. Spoon the foam on top. Do not stir — it's meant to be drunk through.
💡Cold only. Heat splits the coconut emulsion and you get grey speckles on the surface.

  1. Fill the Drinkmate bottle with cold pineapple juice to the line — no higher. Fit the Fizz Infuser.
  2. Carbonate in three short bursts, releasing pressure slowly between each. Juice foams far more than water.
  3. Pour over ice, stir in the syrup and lime gently so you don't knock the gas out.
💡Rinse the Infuser under hot water the moment you're done. Pineapple pulp dries hard inside it.

  3. Fill 6 moulds, insert sticks, freeze at least 6 hours.
💡Run the mould under warm tap water for 8 seconds to release. Pulling harder just breaks the stick out.

💡Salt is what stops a milkshake tasting flat. A pinch does more than another 10 ml of syrup.

💡Sparkling version: mix the whole thing flat, chill it hard, then carbonate it in the Drinkmate. Far better than pouring it over soda water — the acid and the gas integrate instead of fighting.

  3. Top with soda, churn briefly with a long spoon, crown with a mint sprig.
💡Slap the garnish sprig between your palms once before placing it. That's what makes the glass smell of mint.

💡Hot winter version, no machine: 15 ml of syrup in a normal cup of black tea, no lemon. Warm berry, no cordial edge.

💡Start at 10 ml of vinegar. It should read as a sharp edge, not as vinegar — if you can name it, you've used too much.

  3. Serve unstirred with a straw and let whoever's drinking it mix it themselves.
💡Ice must be packed tight. Loose ice lets the syrup fall straight through and you lose the gradient.

💡Blue over yellow always drifts green. Pulsing at the end keeps the streaks distinct and the colour clean.

  1. Stir everything in a shallow metal tray and freeze flat for 45 minutes.
  2. Scrape the whole surface with a fork, breaking the crystals up. Repeat every 40 minutes, three or four times.
  3. Scoop into chilled glasses.
💡A metal tray freezes faster and scrapes cleaner than plastic. Glass is the worst of the three.

  2. Add the sparkling water and the citrus slices right before guests arrive.
  3. Float one large ice block rather than cubes — it dilutes far slower.
💡Freeze water in a loaf tin the night before for the ice block. Cubes turn a punch bowl into water within thirty minutes.

💡5 ml of rose water is the ceiling. One extra millilitre and the whole glass tastes like soap.

  1. Simmer the syrup and lemon juice for 5 minutes until it coats the back of a spoon.
  2. For a glaze: brush onto chicken or lamb in the last 10 minutes of roasting.
  3. For a dressing: cool fully, then whisk in the olive oil, mustard, salt and pepper.
💡Keeps 2 weeks in a jar in the fridge. Reduce further than you think — it thickens a lot as it cools.

  1. Reduce the syrup with the lemon juice over low heat for 6 minutes until it has the thickness of honey, then cool.
  2. Spread the labneh in a shallow bowl and hollow the centre with the back of a spoon.
  3. Drizzle the reduction and the olive oil into the hollow, scatter seeds and torn mint.
💡Reduce it well past pourable. Warm it looks right, and cold it runs straight off the plate.

Method

  1. Pomegranate goes in first — it's the densest, so it stays at the bottom.
  2. Pack the glass with ice to the rim, then pour the Piña Colada syrup slowly over a spoon.
  3. Mix the blue syrup into the water separately and float that on top last, over the back of the spoon.
💡Ice packed to the rim is what holds the bands apart. Without it the three layers merge into brown within a minute.

House rules

The things that decide whether a syrup drink tastes professional or like cordial.

Ratios
  • Start at 1 part syrup to 8 parts liquid — 30 ml in a 240 ml glass.
  • Sparkling water needs more syrup than juice; juice already carries sugar.
  • Hot drinks need about a third less — heat amplifies sweetness.
  • A standard bar pump is 10 ml. Three pumps = one serving.
Balance
  • Every syrup drink wants acid. 10–15 ml fresh lemon or lime rescues a flat glass.
  • A two-finger pinch of salt sharpens fruit the way sugar can't.
  • Blue Lagoon is orange-flavoured, not berry — treat it as a citrus base.
  • Pomegranate is the only one of the four that works in savoury food.
Drinkmate discipline
  • Carbonate cold. Below 5 °C holds roughly twice the gas of room-temperature liquid.
  • Sugar foams. Fill to the line, never past it, and use short bursts rather than one long one.
  • Release the pressure slowly — that hiss is the difference between fizz and a fountain.
  • Rinse the Fizz Infuser immediately after anything but water. Dried syrup blocks it.
  • Anything with pulp, dairy or ice cream does not go in the bottle.
Storage
  • Unopened, room temperature, dark cupboard — sealed bottles keep for years.
  • Once opened, refrigerate. Giffard and Monin both hold 6–8 weeks cold before flavour dulls.
  • Wipe the neck after pouring; sugar on the thread is what breeds mould.
  • The 250 ml Blue Lagoon is only 10 drinks — ration it or buy the 1 L next time.
